As someone that tries to time his posts for maximum engagement on Twitter and Facebook, I can definitely vouch for the twitter analysis up here. Anything posted after 8 p.m. and before 9 a.m. is as good as lost UNLESS the tweet has a hashtag that people are trying to track.

What time zones are you suggesting for these posts, please?

Totally disagree with the FB times - Our Fan page page has a great reaction over the weekend and we also do an 8.30am post, which always gets us a great deal of likes compared to other times. Our 1pm-4pm posts lag likes and chat.

Sunday is our key day to post - People have more time chat. It will vary depending on the style of page you have and the type of fans you have.
